Garden Butter

Here is a recipe for butter that uses vegetables. Below are the ingredients. 1) 2 yellow squashes

2) 4 to 5 cauliflower florets

3) 4 Tbsp avocado oil


Add the yellow squash and cauliflower to a food processor. Add 4 Tbsp of avocado oil to a pan. Heat the oil. Add the pureed vegetables. Cook until it starts to get smooth. Avocado oil has heart-healthy mono-unsaturated fats...the same kind in olive oil. While olive oil tastes better for savory dishes, it also has a lower smoke point than avocado oil, which diminishes the heart-healthy benefits.
